Strawberry Crepes Recipe


I love a morning Baby shower. Probably because breakfast is my favorite. So years ago when I was pregnant with one of my children I had some wonderful friends make some delicious crepes for my baby shower. Of course I got the recipe from them and I wanted to include it in our Baby Shower Blog event.

Recipe: Crepe batter: makes 10-12  10" crepes
1 cup flour
1/2 tsp salt
3 egss
1/3 c melted butter
1  tsp grated lemon peel
1 1/2 c milk
(1 tbs sugar for dessert crepes)

**mix all ingedients in a blender until smooth. Let batter rest refrigerated for 4 hours. Before cooking (1hour) batter must come to room temp.
Heat a 10" pan over medium high heat. Spray well with pam spray or smear with 1 T butter. You will only need to grease the pan for the first crepe.
pour in 1/4 cup batter and swirl pan quickly to coat the bottom of the pan. Cook until the bottom is a pleasant brown. Turn over and cook the other side only a minute or more. Remove and repeat until all batter is used. Stack crepes until ready to fill.

Strawberry filling: to fill 11-12 crepes
2 cups whipped topping
1 8oz. Dannon stawberry yogurt
6 extra large strawberries, cubed
2 stawberries sliced into rounds for the top

**Fold 1 c whipped topping with yogurt to barely blend. Add chopped strawberries and the other 1 c whipped topping. Fold until just mixed. Keep chilled until ready to use. 
**Assembly: Fill crepes with 1 lrg. spoonful of filling. fold crepe in half  twice. Place 3-4 strawberry slices on top. Sprinkle very lightly with powdered sugar. Serve

  3. THANK YOU! I've been looking for a really good crepe recipe! I remember eating them at the I Hop years ago. LOL I've loved them ever since, but haven't had one in years. I will have to try this recipe for sure!
